Set aside.3. Cook broccoli in boiling water for four minutes or until tender. Drain.4. Heat a large nonstick skillet over medium heat. Coat pan with cooking spray and add onion. Cook for four minutes or until tender, stirring occasionally. Add broccoli. Spoon broccoli mix evenly over rice mixture. Top with shredded cheddar.5. Combine egg substitute, milk, remaining salt and pepper in a small bowl, stir with whisk. Pour egg mix over broccoli mix.6. Place bread in a food processor and pulse 10 times or until you have 1.25 cups of crumbs. Combine crumbs and remaining parmesan. Sprinkle mixture evenly over broccoli.
