Also, we've done this with other veggies too...this variety is a family favorite...but, any would work. I sometime even add spices or sauce to the veggies while they cook for a "change."

Spray non-stick frying pan with cooking spray. Cook onion until tender. Add other vegetables and cook about 5-10 minutes. (add salt and pepper to taste) Mix pancake mix according to instructions on box (if you don't like fiber one, any box mix will work too). Add the vegetables to pancake mix (I usually allow them to cool just slightly first). Add cheese. Mix well. Cook the pancakes as normal. Serve with "dipping sauce."
