Drain; rinse under cold water; drain again. Put bread crumbs in a small bowl, add melted butter, and 2 tsp. oil. Stir. Puree cottage cheese in blender. In a bowl whisk 1/2 c milk, flour, mustard until smooth. Add salt and pepper to the flour mixture. Saute onion in 1 tsp oil unitl softened. Put cooked elbows and onions in a baking dish. In a large, heavy-bottomed pan, simmer remaining 2 1/2 c. milk. Whisk in flour mixture, and cook, stirring constantly, 5-7 minutes until thickened. Remove from heat. Add cottage cheese and cheddar. Stir into macroni. Top with crumb mixture. Bake uncovered at 350 degrees for 30 minutes. Makes about 8 1-cup servings.
