In a heavy saute pan, heat olive oil over medium-high heat. Brown polenta rounds, flipping once.Remove polenta from pan and place on a greased cookie sheet. Sprinkle with fresh ground pepper. Top rounds with 1 slice of tomato and a 1/2 oz of goat cheese.
