Boil manicotti approximately 4 minutes. Drain. Spread manicotti on a sheet of waxed paper so they don't stick together.Mix the rest of the ingredients in a large bowl. A pastry bag makes easy work of piping the mixture into the shells, but a spoon works just fine, as well.At this point, the Manicotti can be frozen for another day. Make sure you wrap it well. If you freeze, thaw completely before baking and continue with next step.Spread about 1/2 cup of your favorite pasta sauce (not included in nutri info) in a baking dish and then line up the Manicotti on top in asingle layer.
