Cook scallions, mushrooms and diced tomatoes until soft, about 3 mins. Remove from pan, set aside and lightly sray the same pan again with Pam. Pour in Better'n Eggsand cook over medium high heat until the mixture just starts to bubble. Lightly scrape the side of the pan so that the cook part of the eggs are moved aside and the liquid can now cook. When most of the eggs are cooked but still runny on top, turn the heat down to low and pour the mushroom, tomato and scallion mixture on one side of the eggs. Top with cheese and fold in half. Cover with lid and cook until cheese has melted, about 1-2min.
