Chop a leek, or a slice of a leek, and a portabella mushroom, or whatever kind of mushroom you have on hand and sautee them in the butter. Beat the two eggs as for scrambled eggs and when the leeks and mushrooms are nice and tender pour the egg over them. Shake the skillet a little to spread the egg evenly and raise the edges so it can run to the bottom. Let it cook until set. You can be fancy and flip it with a plate, leave it a little runny on top, or do what I did and cut it in half and flip each half at a time. Extra tasty when served with a slice of whole wheat toast.
