2 Lg Portobello Mushroom Caps
Cooking Spray
2 Tsp Olive Oil
2 Cups Sweet Onions
1/4 Cup Red Wine
1/2 Tbs Balsamic Vinegar
Dash Kosher Salt
1 Tsp Fresh Chopped Thyme
1/4 Cup Pitted and Chopped Kalamata Olives
1 Tsp Lemon Zest
Dash Fresh Ground Black Pepper
1/4 Cup Goat Cheese
1 Tbs Parsley


How Do I Make Portobello Mushrooms w/ Olives, Carmelized Onions and Goat Cheese?

Here is how you make Portobello Mushrooms w/ Olives, Carmelized Onions and Goat Cheese:

Preheat over to 350.If necessary remove gills and stems from mushroom caps. Wipe gently with damp cloth or paper towel to remove debris.Cover baking sheet with foil and lightly spray with cooking spray. Place mushrooms stem side down on foil and back for 10 minutes. Remove from oven. (Do not turn off oven!)Heat olive oil in skillet over medium high heat, Add onions and cook until tender, 10 minutes or so. Add wine, vinegar,half of thyme and dash of salt, bring to a boil. Reduce heat, add olives, lemon zest and dash of pepper. Cook until most of the liquid has evaporated.Combine the rest of the thyme, the parsley and the goat cheese in a small bowl.Take mushrooms and turn over (stem side up) and fill each cap with onion/olive mixture.
