This is a great recipe that uses low fat cottage cheese and sharp two year premium cheddar. I like to add fresh cracked 5 pepper corn blend and nutmeg and serve with mixed greens. Another variation my kids love is to add blanced broccoli and sundried tomatoes (dried not packed in oil).

About 6 or 7 cups of hearty pasta, I like scoobi doo noodles or rottini
2 cups of cottage cheese 1%mf (1container)
3 to 4 cups of grated sharp cheddar cheese, (I like Balderson aged 2 year old cheddar)
2 Eggs, beaten
Salt and Pepper to taste, pasta absorbs salt so be sure to account for that and add a pinch more.


How Do I Make Homade Mac and Cheese?

Here is how you make Homade Mac and Cheese:

Preheat oven to 350 fCook pasta according to pkg instructions, I like to undercook it a bit as it will continue to cook in the oven. In your casserole dish combine cottage cheese, milk, eggs and 2/3's of the grated cheese, salt and pepper and what ever other spices you like with mac and cheese. When the pasta is finished, drain and toss in dish with cheese mixture. Top with remaining cheese and bake for approximately 1 hour. Top should be bubbling through the middle. Let cool for about 15 after you remove it from the oven. Makes about 10 or so servings. We usually have enough for the 5 of us for diner and then left overs for lunches the next day.
