This is a great recipe that uses low fat cottage cheese and sharp two year premium cheddar. I like to add fresh cracked 5 pepper corn blend and nutmeg and serve with mixed greens. Another variation my kids love is to add blanced broccoli and sundried tomatoes (dried not packed in oil). In your casserole dish combine cottage cheese, milk, eggs and 2/3's of the grated cheese, salt and pepper and what ever other spices you like with mac and cheese. When the pasta is finished, drain and toss in dish with cheese mixture. Top with remaining cheese and bake for approximately 1 hour. Top should be bubbling through the middle. Let cool for about 15 after you remove it from the oven. Makes about 10 or so servings. We usually have enough for the 5 of us for diner and then left overs for lunches the next day. Serve with a salad of mixed greens and tomatoes and you have a great meat free meal.
