1 tbsp Extra Virgin Olive Oil

1 large Egg
1/4 cup warm water

Here is how you make Cheese Ravioli:

In a large bowl mix all of the filling ingredients and set aside.In a stand mixer bowl, mix all eggs and olive oil. Fit the mixer with the dough hook and add the flour one cup at a time. Then add the water in portions to see if the dough needs more or less to come together into a sticky dough. It should be softer than Playdough and stretchy. Stir with the dough hook for 5 or 10 minutes until the dough is kneaded enough.Cut the ball of dough into quarters and roll them out on a setting of 4 with a pasta maker. Roll out 2 at a time (top and bottom of ravioli).Brush the dough with an egg wash to make it sticky. Scoop the filling with a tablespoon and place 18 evenly spaced balls onto the dough. Cover with the other side of the dough.
