Cheddar, Lite Sharp Celtic, *Trader Joe's, 6 oz, divided into 2 oz. coarsely grated and 4 oz. coarsely grated Cheddar Cheese, 4 oz, coarsely grated Cheese, Parmasean/Romano 1/4 cup, shredded Rice flour, brown, .25 cup Heavy Whipping Cream, .75 cup, whipped Fat free half and half, 1.75 cup Brown Rice Penne Pasta, Organic, *Trader Joe's, 8 cup Salt, 1 tsp Pepper, black, .5 tsp Pan spray How Do I Make Mac N Cheese, DC style?Here is how you make Mac N Cheese, DC style: Topping: Preheat oven to 400 degrees.Melt 2tbsp. butter(y spread). Stir together with panko bread crumbs, 2. oz shredded lite cheddar and 1/4 C. Parmasean in small bowl. Set aside.Sauce and macaroni:Put 4 quarts of water and 2 tbsp. water on stove to boil. Meanwhile, melt 4 tbsp. butter(y spread) over medium-low heat in quart pan. Stir in brown rice flour. Cook roux, stirring, 3 minutes. Whisk in cream and half n half. Bring to a boil, whisking regularly. (When macaroni water boils, pour in a whole package of TJ's brown rice penne pasta to cook.) When milk sauce boils, simmer for 3 more minutes. Add remaining shredded lite cheddar, 4 oz. shredded sharp cheddar, 1/4 C. parmasean/romano, pinch of Himalayan pink salt and the pepper. Stir until cheese melt together with the cream sauce. Remove from heat. When pasta is al dente, remove from heat. Retain 1/4 C. of the pasta water and drain the pasta. Put the pasta back in it's cooking pan and pour on the cheese sauce. Fold until the sauce is spread evenly over the pasta. Pour the mac n cheese into a large shallow pan that has been sprayed with pan spray. (I used one 6x10 oblong and one 8x 14 oblong glass pyrex pans because I like crunchy mac n cheese.) Spread the pre-made panko mixture over the top of the mac n cheese. Cook 25-35 minutes (remove smaller pan at 25 minutes and cook the larger one 10 more minutes.)
