Here is how you make Healthy Mac-N-Cheese:

In large pot cook pasta of your choice. Meanwhile in a medium sauce pan over med-high heat mix milk and flour, whisk until smooth. Then whisk in remaining ingredients except cheese, spinach and pasta. Continue whisking over med-high heat until tofu has completely dissolved, about 5 minutes. Then add in cheese, remove pot from heat, mix until cheese is completely melted.
