Cook the macaroni in a large pan of boiling, salted water according to the instructions on the packet.Melt the low fat spread in a non-stick pan and add the chopped onion. Stir fry until the onion is softened. Stir in the plain flour and cook over a low heat for one minute.Remove the pan from the heat and stir in the vegetable stock vigourously. Gradually add the milk to make a smooth sauce. Put back over the heat, bring to the boil and simmer for one minute.Remove the pan from the heat again and add the mustard and cheese. Stir well until the cheese has melted.Pour into a heat proof dish.
