1) Chop onions and garlic fine. Peel ginger and chop.2) Put 2 TB oil in 2 qt saucepan (with lid). Heat on med/high until shimmery.3) Fry onions, garlic, and ginger for 3 minutes, mixing well.4) Add can of tomatoes and 1/2 tsp salt. Mix well. Cover and cook on med/high heat for 3 minutes.5) Uncover, remove from heat, and let cool for at least 5 minutes.6) Put fried ingredients in a blender along with the yogurt. Blend into a thick paste.7) Heat remaining 1 TB oil on medium heat. Add all the powdered spices and fry for one minute, mixing well.8) Turn down heat to low and add paste from blender. Be careful! Mix well.9) Pour in package of frozen peas. Mix well. Cover and allow to heat through, about 3 minutes. Serve.Optional10) If using cheese, add 8 oz paneer, panela, or other fresh melting cheese that has been cut to ~1/2 inch dice.
