Manicotti and stuffing:
1 onion
2 cups chopped broccoli
2 cups chopped cauliflower
2 cups chopped carrot
1 red pepper
3 tbsp olive oil
1 tbsp balsamic vinegar
2 garlic cloves, minced
3 cups spinach
1 cup freshly grated parmesan cheese
1 cup ricotta cheese
1 egg, beaten
2 slices bread
1/2 cup fresh parsley
l/2 cup fresh basil
salt and pepper to taste
16 manicotti shells
2 - 14 oz cans tomato sauce
cheese sauce (see recipe below)
asiago cheese grated


Cheese Sauce:
3 tbsp butter (or marg)
3 tbsp flour
3 cups milk
2 cups grated mozzarella or swiss cheese
1 tsp worcestershire sauce
Dash hot pepper sauce (or salsa)
Salt & pepper to taste


How Do I Make Roasted Vegetable Manicotti with Cheese Sauce?

Here is how you make Roasted Vegetable Manicotti with Cheese Sauce:

Chop veggies into l" pieces. Toss with oil, vinegar and garlic. Roast at 350 for 40 min, sitrring occassionally. Mix spinach with hot veggies and set aside to cool. Pulse veggies in food processor to a coarse texture. Mix parmesan, ricotta and egg. Blend with veggies. In food processor, whirl bread, herbs and seasoning. Add to veggie mixture. Cook manicotti. Drain well. Fill with veggie mix using spoon. Pour tomato sauce in bottom of 2, 9x13 baking dishes and arrange stuffed manicotti in each baking dish. Make cheese sauce, below and pour over manicotti. Sprinkle with grated asiago. Bake at 350 for about 30 min. Serves 8-10.
