8 oz. Velveeta Light Cheese Product
3 cups Skim Milk
2 cups Spinach, fresh or frozen, chopped
1 cup, Onion, chopped
2 T. Margarine
2 T. Flour
2 cups Corn Flakes Cereal, crushed


How Do I Make Light Spinach Mac n' Cheese?

Here is how you make Light Spinach Mac n' Cheese:

Cook elbows per package directions and set aside. In a frying pan coated with cooking spray, saute the onions on low heat until translucent. Add the spinach and saute just until wilted. Layer half the elbows and half the spinach onion misture in a 9 x 12 baking dish. Then repeat with other half. Melt margarine in a saucepan over medium high heat. Add the flour and stir until completely combined. Wisk in the milk and cook until just slightly thickened. Reduce the heat and add the cheese, stirring until cheese is melted. Pour evenly over top of pasta mixture. Sprinkle corn flakes evenly on top. Bake at 400 degrees for 30 minutes.Serving Size:?Makes 8 servings
