Here is how you make Spinach and Cheese Enchiladas:

Remove husks from tomatillos. Rinse tomatillos and cut up all vegetables. Roast in the oven with oil and salt. Blend roasted vegetables and green chilis and add salt to taste. Add sauce to bottom of the pan so enchiladas won't stick. Place spinach and cheese in a tortilla and put seam side down. When all tortillas are rolled and remaining sauce on top. Add remaining cheese and bake at 350 degrees for 20 minutes or until heated through. Bits of browning on the cheese is good.
