Here is how you make Stuffed Peppers with Goat Cheese:

1) Preheat oven to 350*. In a pot, bring 1.5 cups of water to a boil with the quinoa, a pinch of salt, and stock concentrate. Once boiling, reduce to a simmer and cook for 15 minutes, until softened. Drain and set aside.2) Finely chop the shallot. Mince the garlic. Finely chop the parsley. Slice the mushrooms. Halve the bell peppers lengthwise and remove the core, seeds, and white veins.3) Drizzle the peppers with olive oil and season with salt and pepper. Roast for about 6 minutes, until slightly softened. Set aside.4) Heat 1 table spoon oil in a pan over medium-high heat. Add the mushrooms and cook, tossing, for 4 minutes, until golden brown. Add the shallot and garlic and cook for about 30 seconds, until fragrant.5) Add soy sauce, quinoa, half the parsley, and 1 tablespoon vinegar. Toss to combine. Cook for another minute or two to meld the flavors.6) Spoon the quinoa and mushroom filling into the peppers and bake for 5 minutes, until peppers are softened.Finish:Serve the peppers and crumble the goat cheese to top.
