Pre-heat oven to 375F.Slice the top off of each pepper and remove seeds and ribs. Place in a greased shallow dish.In a pan over medium heat, warm olive oil. Add diced onion, minced garlic, and minced soy sausages to pan; cook until onion is soft, about 5 minutes, stirring frequently.In a medium bowl, beat egg and cottage cheese together until well blended. Stir in remaining ingredients, including onion/garlic/soy sausage.Fill each pepper with mixture and replace top of pepper. Bake at 375 for 40 to 45 minutes.
