Pureed cauliflower, carrot and silken tofu are in the sauce which adds nutrients and flavour.Just add a side of asparagus, kale or swiss chard and you have a delicious meal!( I forgot to take a picture until the next day after it had been in the fridge... so it doesn't look as tasty as it did D: )

1 1/2 cups chopped carrots
1 cup edmame
2 1/2-3 cups dry whole wheat macaroni

1 1/4 cups milk (Goat milk or a Non-dairy substitute also work)
2 cups shredded cheddar cheese
1/3 cup parmesan cheese
1/2 block (175 grams) of silken tofu (firmness doesn't matter)

1/4 cup cheddar cheese
1/2 cup plain dry breadcrumbs

Here is how you make Mac n Cheese (with hidden veggies and tofu):

Steam cauliflower and carrots for 10 minutes. Meanwhile cook macaroni until desired doneness and add edmame 5 minutes before macaroni is finished. Puree the cauliflower and carrots in a food processor or blender. Slowly add the milk, both cheeses and tofu. Puree until very smooth. In a separate small bowl mix the breadcrumbs and 1/4 cup of cheddar cheese. Mix the drained macaroni/edmame and sauce. Pour into a 2 quart casserole dish and top with the breadcrumb mixture. Bake at 400 degrees for 20-25 minutes.Serving Size:?makes 6 large servings
