Here is how you make Eileen's Mac and Cheese:

Cook pasta as directed. In the meantime saute onions in cooking spray until translucent. Add diced tomatoes, salt, pepper and onions to a bowl. Once pasta is cooked add it as well and stir.Coat baking pan with oil discard any extra. Place a layer of macaroni on the bottom and them cover with cheese. Alternate one time. Place in oven at 350 for half an hour or until cheese is melted and warm through. Cut into 12 squares and serve with a salad.
