1/4 cup rice, dry
1/4 cup pearled barley, dry
1 cup water
2 tsp better than boullion no-chicken base
2 medium carrots
1/2 medium onion
1/3 cup 1% milkfat cottage cheese
1 egg
5-10 leaves fresh basil or 1/2 tsp dried
1/2 tsp salt
3/4 cup cheddar cheese


How Do I Make Cheese and Grain Protein Veggie Burgers?

Here is how you make Cheese and Grain Protein Veggie Burgers:

1. Preheat oven to 350 degrees.2. Place water, rice, barley and no-chicken base in small pot. Bring to a boil and then simmer 10-20 minutes until all water is absorbed. When cooked, place in fridge while you make the rest of the recipe.3. Press the tofu to remove water.* 4. Crumble tofu into large bowl.5. Puree cottage cheese, shredded carrots, diced onion, egg, basil and salt in food processor, magic bullet or blender.6. Pour puree over tofu, stir gently to combine.7. Add cooled rice, cheese and bread crumbs to tofu mixture. If the mixture is too dry, you can add more egg. If it is too wet (did you press the tofu??) you can add more bread crumbs, but be careful of calories!8. Press into patties using 1/3 cup mixture per patty.9. Bake on greased cookie sheet for 5-7 minutes, or until bottoms are crisp and lightly browned. Then flip and bake another 5-7 minutes.Serve with buns or on top of salad.Nutrition Facts are using 4C Italian-style bread crumbs and 1/4 cup reduced fat and 1/2 cup regular cheddar.*Wrap tofu in paper towels and press between two plates with something heavy on top for up to 2 hours. Frozen tofu is great for use in veggie burgers! Just defrost like you would meet and then wring out all the water using paper towels.
