1 (15 ounce) can coconut milk

2 cups vegetable broth
1/2 cup lime juice
1.5 cups rice, uncooked

1) In a large oven safe saute or casserole pan, place oil over medium-high heat.2) Add the chicken and brown on all sides (about 5 minutes), remove from pan and set aside.3) Add onions, pepper and curry powder to the pan. Cook and stir for a few minutes. Add garlic, stir for a minute or two more, then add the salsa, salt and pepper and cook a few minutes. 4) Add coconut milk, can of water, broth, and lime juice.
