Add in 1/2 cup water, and stir until it forms a ball. Spread remaining 2 tbsp soy flour on a surface to lightly coat (also, lightly coat your hands). Knead dough for about 1 minute, and flatten to about 1/2" thick. Cut into desired shape (strips, "nuggets", "breast", etc)- dough will double during the cooking process.In a large pot, combine broth, liquid smoke, nutritional yeast, onion powder, sage, thyme, & oregano. Bring to a boil. Add seitan pieces, one at a time. Reduce heat, cover, and simmer for 40-50 minutes, or until most of the broth has evaporated.
