This is the "Masala" mixture. Set aside.3) Heat the olive oil in a large frying pan. Add diced onion and fry until it starts to turn translucent.4) Add tomatoes, tomato paste, chickpeas, spice mixture and apricots with their liquid. Stir well.5) Cook uncovered over medium heat for approximately 20 minutes until most of the liquid has evaporated.
