1 tbsp. fresh parsley, chopped
1/2 tsp. grated lemon rind
1/2 tsp. paprika
1/4 tsp. black pepper
2 lg. egg whites, lightly beaten

Here is how you make Middle Eastern Chickpea Miniburgers:

Place potato in a saucepan; cover with water. Bring to a boil and cook until tender. Drain and let cool a bit. Chop and place in a bowl. Add 0.5 tbsp. oil and garlic to bowl; mash potato mix with a masher until slightly chunky. Remove 3 tbsp. garbanzo beans and place in a small bowl. Add remaining beans to potato mix and mash until well blended. Stir in remaining whole beans, parley, and remaining ingredients. With moistened hands, divide mix into six equal portions and shape into patties.Heat 3/4 tbsp oil in a large nonstick skillet over medium-high heat. Add three patties to the pan. Reduce heat to medium and cook 4 minutes or until bottoms are golden. Carefully turn patties over. Cook 3 minutes or until bottoms are golden and patties are set.
