2 teaspoons ground cumin
3 cups water
28 ounce can crushed tomatoes
3/4 cup uncooked bulgur
15 1/2 ounce can black beans
15 1/2 ounce can red kidney beans
(1/2 cup chopped cilantro - optional)
(1/2 teaspoon lime juice - optional)
(1/4 cup fat-free plain yogurt per serving for garnish - completely optional)
(Tabasco sauce per serving - optional)


How Do I Make Bulgur and Bean Chili?

Here is how you make Bulgur and Bean Chili:

Heat oil in VERY large saucepan over medium-high heat. Add onion and saute until almost tender. (If you have chili peppers, use them here)Add 1 tablespoon paprika (or 2 tablespoons chili powder if you like things hot), 1 tablespoon minced garlic and 2 teaspoons ground cumin. Saute about 30 seconds.Add 3 cups of water, one 28 ounce can crushed tomatoes and their puree, 3/4 cup uncooked bulgur. Bring to a boil, then cover and reduce hear to medium-low and simmer 10 minutes, stirring occasionally.Stir in one 15 1/2 ounce can black beans (rinsed and drained) and one 15 1/2 ounce can red kidney beans (rinsed and drained). Simmer, covered, over medium heat, until bulgur is tender - about five minutes.Remove from heat and stir in cilantro and a squeeze of lime juice, if you like. I like to serve it with a dollop of fat-free plain yogurt instead of sour cream.
