Here is how you make Roo's Black Bean Hominy Vegetarian Chili:

Bring broth and tomatoes to low simmer. Meanwhile, in dutch oven or soup kettle, heat oil over med high heat. Add onions and peppers and saute until tender and lightly browned. Add dried spices and stir for about 2 minutes. Next add means, hominy and broth. Bring to a simmer, then reduce heat to low and continue simmering, partly covered until veggies are soft and mixture has thickened to "just about" desired thickness.
