2 1/2 C diced red onions
1 C diced carrots
2 green bell peppers (or your choice of colors)
1 Medium Sweet potato diced (1 1/2 Cups)
2 C Mushrooms, diced
2 TBSP jalapenos, chopped

3 TBSP ground cumin
1/2 tsp pepper flakes, crushed
2 TBSP chili powder
4 TBSP garlic, chopped
2 TBSP dried oregano
2 TBSP chipolte, chopped
1 tsp cinnamon

3 TBSP Tomato paste
3 (14 oz cans) Fire roasted tomatoes
1 (15 oz can) Chick Peas, drained
1 (15 oz can) Red Kidney beans, drained
1 (15 oz can) Black beans, drained
1 (15 oz can) Adzuki beans, drained




How Do I Make FAT MELTING VEGETARIAN CHILI?

Here is how you make FAT MELTING VEGETARIAN CHILI:

Cut your vegetable. Warm the oil (for vegan, use water) and saute onions, carrots, bell peppers, jalapenos, sweet potatoes and mushrooms, stirring occasionally until the vegetables start to soften, about 10 mins. Stir in the cumin, crushed pepper flakes, chili powder ,oregano, chipolte in adobo sauce, cinnamon,garlic. Cook 3 mins. smelling fragrant.Add the tomatoes, tomato paste, all beans and chick peas. At this point you can add Vegetable broth or vegetable juice or water if you like your chili a bit thinner. Cover and simmer for 20 mins, stirring occasionally. Then stir in 10 oz. bag of corn and simmer an additional 5 mins. Until corn is heated through.
