2 (14.5 oz) cans diced tomatoes
1 (15-oz) can tomato sauce
2 cups water
1 (4-oz) can diced green chilies
2 Tbs. chili powder
2 tsp. cumin
2 tsp. cocoa powder
1-1/2 tsp. paprika
1/2 tsp. sugar
1/2 tsp. ground coriander
1/2 tsp. cayenne pepper or to taste (optional)
salt and pepper to taste
1 (15-oz) can kidney beans, drained and rinsed
1 (15-oz) can pinto beans, drained and rinsed
1 (15-oz) can black beans, drained and rinsed
1-1/2 cups fresh or frozen corn

Here is how you make Quinoa Chili:

Heat olive oil in large stock pot over med-high heat. Once oil is hot, add onion and saute until tender, about 4 minutes, adding garlic during last 30 seconds of sauteing. Add in diced tomatoes, tomato sauce, cooked quinoa, water, green chilies, chili powder, cumin, cocoa, paprika, sugar, coriander, cayenne pepper and season with salt and pepper to taste. Bring mixture just to a boil, then reduce heat to a simmer. Cover and simmer 30 minutes. Add in beans and corn and cook until heated through.
