1 stalk celery, chopped
2C tomato sauce (or puree a 8oz can of plum tomatoes, and puree, adding just enough juice from the can to help puree to make about 2 cups
1t oregano
1C sweet red and yellow peppers, chopped
1 package Smart Sausage, Italian style, or other soy, sausage (4 links)sliced into bite size pieces
2 cans red kidney beans, drained and rinsed.

in a food processor, blend the ancho chilis, garlic, cumin seed, and red pepper until finely ground and mixed.In a dutch oven or large pot on medium high heat, pour vermouth, wine or water to warm and add onions. Cook onions for about 2 minutes, add celery and cook an additional 3 minutes until onions are soft.Add tomato sauce or puree, sweet peppers and oregano and bring to a boil. Turn down the heat and simmer covered for 15 minutes. Meanwhile, slice the soy sausage links into bite size pieces. Add sausage and beans and simmer, covered an additional 30 minutes.
