2 medium onions, chopped
2 medium zucchini, diced
3 Tb. olive oil
4 cloves of garlic, minced
1 each: red, yellow, orange and green bell peppers, diced
1-2 jalapeno peppers, minced
5 fresh plum tomaotes, chopped
1-28 0z. can of diced plum tomatoes with juice
1-16 oz. can each: red kidney beans, white kidney beans, pinto beans, and black beans, drained and rinsed
2 Tb. chili powder or to taste
1 Tb. ground cumin
2 tsp. dried oregano
1 tsp. fennel seeds
1/3 C. fresh cilantro, chopped
Ground black pepper to taste

Here is how you make Laurie's Confetti Vegetarian Chili:

Preheat oven to 350 degrees. Place the eggplant into a small, shallow roasting pan, sprinkle with 1/2 of the garlic and 1 Tb. of olive oil. Cover with aluminum foil and bake in the oven for 30 minutes, stirring once. Heat the remaining oil in a large saucepan or dutch oven, add the onions and remaining garlic and cook for 5 minutes. add the zucchini, bell peppers, and jalapenos and cook 5 minutes, stirring once. Add the canned tomatoes with their liquid, the fresh tomatoes, chili powder, cumin, oregano, and fennel. Gently stir in the cooked eggplan and simmer for 20 minutes over low heat.
