2 onions, chopped
2-3 carrots, chopped
2 lg. bell peppers, chopped
3 cloves of minced garlic
2 (10-oz.) pkgs. frozen spinach
3 (16-oz) cans whole tomatoes, drained (preferably no salt added)
2 (8-oz) cans tomato sauce (no salt added)
1 (6-oz) can tomato paste
1 can dark red kidney beans, rinsed and drained
1 can black beans, rinsed and drained
1 cup dried lentils, rinsed
1.5 cup frozen sweet corn (or canned--drained and rinsed)
3 T. chili powder
2 T. black pepper
2 T. dried oregano
1 T. dried basil
1 T. ground cumin


How Do I Make Pastor Todd's Vegetarian Chili?

Here is how you make Pastor Todd's Vegetarian Chili:

Heat olive oil on medium heat in large pot. Add carrots, onions, bell peppers, spinach, dried lentils, and garlic. Add a small amount of vegetable juice or broth or water if necessary. (Feel free to add additional diced veggies) Cook for about 10 minutes until the onions become translucent. Add all tomato products and spices/herbs--reduce heat to low and simmer for an hour, covering the pot. Stir every 5-10 minutes. The cooking process will break down the whole tomatoes, but you can also break them apart with a large metal spoon. 15 minutes before you are ready to serve, add the beans and corn, gently stirring them into the mix. Taste a bite to ensure that the lentils and carrots are tender--you may wish to add an additional sprinkling of cumin, oregano, and other spices if you enjoy hot and spicy chili.
