Here is how you make Quick Veggie Crockpot Chili:

Combine all ingredients in large slowcooker. Cook on high 4 or so hours or on low 8 or so, until bubbly and cooked thru.Note: I use beef broth for a bit of a meaty flavor but you can substitiute vegetable broth for a true vegatrian dish. You can also change up the veggies and beans to what you have on hand or prefer. You can substitue corn for the hominy. I like bulgar in non-meat chilis but you can substitute rice or barley for a more meaty texture or leave it out and cut back on the broth.
