1- Chop onions, peppers and mushrooms.2- Sautee above ingredients in pan with olive oil/broth.3-Add Veggie grounds. Cook.4-Add corn, Kidney beans (drained) and seasonings.**I use random seasonings from my cabinet and freezer including cilantro, pepper (scotch bonnet), oregano, sazon, etc....5 Mix all together and let cook for a few minutes.6- Serve! (Over rice, with tortillas chips, with cornbread, etc)(if you drain/rinse your kidney beans it'll lesson the sodium content.
