throw tomatoes in heavy bottom pot over low heat and sweat till mushy. crush down, then pull out skins. OR use a can of stewed tomatoes. in separate pan, saute onion in a little butter then add to tomato pot when soft/translucent. drain and rinse all three cans of beans, add to pot. add corn (he used frozen). stir to combine. add spices to taste. and taste a lot! add vegetable broth or other liquid until desired consistency is obtained.simmer for ~30 min, stirring occasionally. adjust seasonings accordingly. serve over rice.
