1 Tsp fenugreek seeds
.5 tsp salt
Oil for frying

.5tsp cumin seeds
2 small red peppers
1 med onion, cubed
.5 tsp salt
.5 tsp turmeric
1 Tsp ginger, crushed
6 curry leaves
4 crushed garlic cloves minced
2 small green chillies
1.5 pounds boiled & cubed potato
.5 c fresh cilantro


How Do I Make Classic Masala Dossa?

Here is how you make Classic Masala Dossa:

Dossa:Rinse rice well and cover with 4 c of water.Out urad dhal & fenugreek in separate bowl, add water to cover.Leave to soak 4-6 hours (or over night)drain both into separate colandersGrind rice in blender, then add 1c water to make a smooth paste, this can take up to 10 minutesDo the same with the fenugreek dhal mixtureCombine the 2 pastes in a mixing bowl, while mixing add enough water to make a medium thick batter.This should give about 6 cups.Set aside & cover with a clothLet ferment for about 8 hours until bubbly. then you can refrigerate until needed. - It will keep for up to 1 week in the fridge.Frying:put griddle or cast iron pan on fire with about 1 Tsp oil. Heat well. Ladle 1/4 c batter in the middle of the pan. then spread quickly and evenly in circular motion.drizzle .5 Tsp oil on top.let it brown gradually until the outer edges look dry, about 2 minutes, do NOT turn. Loosen with a spatula, fill with .5 cup of potato filling, roll up & serve immediately.Potato filling:heat ghee in skillet, when oil is wavy add mustard & cumin seeds. Wait for seeds to pop (about 1 min), add red pepper & onion, cook for about 5 minutes until onion is softened, add all other spices apart from salt & cilantro & let sizzle for 1 minute.add potatoes & .5c water cook while stirring well. smash some potato a bit with a wooden spoon. Add salt & cilantro, then remove from fire & let it sit covered.
