1 T olive oil
1 small onion, 1/2 inch dices
2 cloves garlic, minced
1 large eggplant, 1 inch dices
salt and pepper
2 zucchini, 3/4 inch dices
1 yellow pepper, 1 inch dices
1 orange pepper, 1 inch dices
16 oz can garbanzo beans (chickpeas), drained and rinsed
28 oz can crushed tomatoes
crushed red pepper flakes
dried basil
dried thyme


How Do I Make Crock Pot Ratatouille?

Here is how you make Crock Pot Ratatouille:

Heat oil in a skillet. Saute garlic and onions till onions are translucent. Add eggplant, season with salt and pepper, and saute 2 minutes. Cover and turn heat to low 4-5 min till eggplant is softened. Put in crockpot. Add all other ingredients (except basil and thyme) and gently stir to combine. (I also add a bit of water-1/2 cup or so-to thin out the mixture a bit.) Cook on Low for 4.5-5 hours, till veggies are soft. 30 min before cooking is done, add basil and thyme to taste, recover, and finish cooking. Makes 12 cups of soup total.
