Makes 8-10 1-cup servingsPlace the couscous in a bowl. Melt butter in boiling water and pour over the couscous. Cover tightly and allow the couscous to soak for 5 mins. Fluff with a fork. Whisk together the yogurt, live oil, vinegar, curry, turmeric with a fork. Add the carrots, parsley, currants, almonds, scallions & red onions and mis with couscous.
