How Do I Make Coconut Curry Vegetables?

Here is how you make Coconut Curry Vegetables:

Put olive oil in heated pan (medium heat). Add shallots and garlic, saute for a couple minutes then add the hard veggies (carrots, peppers, etc), add 1/2 of the coconut milk, seaweed & curry. Add 1/4 cup of water, stir and cover with lid. When the hard veggies are just starting to turn soft add the rest of the veggies accept the spinach. Add the rest of the coconut milk and another 1/4 cup of water (you can add more if too thick). Simmer until all the veggies are tender. Add the spinach and mix it in. When wilted it is done.
