2 15-oz. cans light coconut milk, or 1 can regular and 1 cup water
2 tsp light brown sugar
Salt
1 tbsp ground coriander
2 tsp curry powder
1/2 tsp turmeric
1/4 tsp cayenne
1 tsp tamarind paste
2 large garlic cloves, minced
1 tbsp finely chopped ginger
4 Roma or plum tomatoes, seeded and chopped
4 scallions, chopped
Juice of 1 lime
Cilantro, chopped, for garnish


How Do I Make Malaysian-Inspired Tofu Curry?

Here is how you make Malaysian-Inspired Tofu Curry:

Drain, then dice the tofu into 1/2 inch cubes. Combine the coconut milk, sugar, 1/2 tsp salt, spices, tamarind paste, garlic and ginger in a medium skillet. Boil for 1 minute, then add tofu. Lower the heat and simmer for 10 minutes. Add the tomatoes and scallions and simmer for approximately 10 minutes more. Add the lime juice and taste for salt.
