.1 cup Corn Starch
1.5 cup Rooster Brand Coconut Milk
1.75 cup, chopped Carrots, raw
4 cup Tofu, firm
6 tsp Granulated Sugar


How Do I Make Red Curry Vegetables with Tofu?

Here is how you make Red Curry Vegetables with Tofu:

Dice the tofu and allow to drain. Cut all the vegetables into large bite sized pieces. Slice the ginger thinly. Pour oil into a hot wok. Once it just starts to smoke add the tofu and cook until lightly golden. Remove tofu and add the onions and garlic slices. Cook, stirring constantly for 2 minutes. Add the green beans and cook until half way done. Add the carrots and cook 3-4 minutes longer. Add the red pepper and squashes. Cook for 1 minute. Add remaining ingredients, except for corn starch and cook until all vegetables are tender. Add the tofu back in. Dissolve the cornstarch in cold water and add to thicken.
