extra firm tofu (I used an entire Nasoya packaged)
zucchini, one whole
sugar snap peas, in the shell, about two cups
one green bell pepper
one bunch of bok choy
one 8 oz package of bean sprouts
5 cloves of garlic, minced
one cup (uncooked) white rice
vegetable oil
yellow curry sauce (I used the yellow curry sauce from CurrySimple)

Here is how you make Yellow Curry with Tofu and Veggies:

Press and cube the tofu to whatever size you want. Begin frying the tofu and garlic in the vegetable oil on medium heat. Turn the tofu as the sides are browned.Once the tofu is about 75% done, add the vegetables to the mixture. Once the vegetables are cooked to taste, add the curry sauce until entire mixture is hot. While the tofu and veggies are cooking, prepare the rice as specified on the package.Serve the tofu/veggie curry mixture over the rice. Makes 4-5 servings.
