Saute the peppers and onions with salt and pepper in olive oil until soft. Add the curry paste and garlic and saute for another minute. Add the yams, coconut milk, and water and simmer until the yams are soft. Add the snap peas and simmer for a few minutes more. Stir in the cilantro. Serve over rice, quinoa or you favourite grain.
