While the milk is heating, crack eggs in to a bowl and mix well with a fork. Set out a (different) bowl that you can put the hot custard in to when it is done.The milk should be hot to the touch. Put milk in a pan on medium-low heat. Add sugar and vanilla. Mix until sugar is dissolved. Add eggs, and mix well with a whisk. Heat, continuing to mix well with the whisk.Here's the tricky part: the custard must be removed right away as soon as it even thinks of boiling. (I ruined my first batch by leaving it on for an extra 15 seconds - it will separate if it gets too hot.) Use the whisk to mix for a few seconds, then stop and see if there are any "boiling" bubbles. Repeat. (Some bubbles will form just from the mixing - these are not the bubbles you are looking for.) It will thicken very slightly during this time. As soon as you see one bubble from boiling, remove the custard from the pan, put it in the bowl, and put it in the fridge or freezer to cool. (If you're pretty sure it's on the brink of boiling, you could even remove it a bit sooner.)Let cool for a few minutes, then eat.
