2 cups cooked black beans or mix of black and pinto beans (If using canned beans rinse and drain)
1 cup corn (frozen/thawed, or canned/rinsed/drained)
2 cups roasted red peppers cut into small pieces.
1 large can enchilada sauce, (About 3 1/2 c. if making your own sauce)

2 cups fat free shredded cheese (cheddar or mix of cheddar and mozzarella)

2 oz regular shredded cheddar (for top)

1 6oz cup of plain yogurt (I like nonfat greek yogurt because of it's sour cream like consistency)

9 small corn tortillas (low fat)

Here is how you make Maripat's Easy Enchilada Bake:

8 servings, about 4X3 " pieces.Preheat oven to 350 degreesDrain and rinse cans of corn and beans in a colander, mix together corn and beans and set aside.In a small mixing bowl, mix 3/4 c enchilada sauce and the yogurt/sour cream for top layer, and set aside for final layer.Mix 1/2 cup fat free cheese and the 2oz regular cheese in small bowl and set aside for final layer.Spray the cooking pan with cooking spray. Pour and spread a thin layer of enchilada sauce, about 1/2 cup, into the bottom of an 8" x 10" x 2" pan (or similar sized baking dish) Tear tortillas into approx 4 pieces each, using 3 tortillas for each layer..Cover bottom of pan with one layer of tortilla pieces.Sprinkle 1/3 of red pepper, corn and bean mixture on the layer of tortillas.Pour 1/2 of the remaining enchilada sauce mixture on top of pepper, corn and beans.Sprinkle half of the shredded cheese on top of the sauce.Top with layer of tortillas and repeat the layer as before..Final layer: layer tortillas, pepper/corn/bean mix, spread mixed yogurt or sour cream/ sauce mixture, and finally sprinkle the mix of fat free/regular cheddar cheeses.Bake for 25-30 minutes, until cheese is golden brown and the dish bubbling. If the top seems to get too brown or dry before the dish is hot all the way through, cover with aluminum foil and continue baking a while longer.
