1 large onion, sliced into thin wedges
2 cloves garlic, miced
2 T olive oil
1 16 oz can diced tomatoes
1 1/2 t dried thyme, crushed
1 bay leaf
1 t salt
1/4 t pepper
1 medium unpeeled eggplant
2 medium zucchini, sliced
2 green peppers, seeded and cut into strips

Here is how you make Quick and Easy Ratatouile:

In large stew pot cook onion and garlic in oil until tender. Add undrained tomatoes, thyme, bay leaf, salt and pepper. Cover and simmer for 10 minutes. Discard bay leaf. Remove and set aside 2 cups of the tomato misture. Slice eggplant in half lengthwise, then crosswise into 1/2 inch slcies. Arrange half of eggplant, zucchini and peppers over tomato mixture in pan. Cover with 1 cup of reserved tomato mixture. Arrange remaining vegetables on top. Add remaining reserved tomato mixture. Cover and simmer 20 minutes.
