Preheat two small pans over medium heat. Add 1 Tbsp olive oil to EACH pan.First, chop the onion slices in half and separate the onion layers. Add the onion, spinach and mushrooms to one pan. Stir frequently. Cook til spinach is wilted and onions are translucent. Meanwhile, beat egg whites and milk till fluffy. Add seasoning; pour into the second pan.
