Pre-heat oven to 375 degrees. Spray muffin tins with non-stick cooking spray. Break up breakfast patties and distribute between 14 muffin cups. Add spinach & mushrooms to same muffin cups. Pour liquid egg substitute into each tin until just below rim. Bake for 20 - 25 minutes or until egg mixture is firm. Cool and freeze if desired.
