2 Zucchini, thick cut moons
4 Tbs Olive oil
1 large Onion, sliced
2 clove Garlic, minced
2 cups Brown mushrooms, halved
1 Tbs ground Coriander
2 tsp ground Cumin
1 Tbs Cinnamon
2 tsp ground Turmeric
4 small new Red Potatoes, Quartered
2 1/2 c Tomato puree
1 TBS Tomato paste
1 TBS Ketchup
.25 tsp Cayenne pepper
1/3 c chopped dried Apricots
3 c canned Chickpeas (2 cans drained & rinsed)
Salt & ground Black pepper (optional)
1 TBS Cilantro, chopped for garnish


How Do I Make Eggplant and Chickpea Tagine?

Here is how you make Eggplant and Chickpea Tagine:

1. Sprinkle salt over eggplant and zucchini and leave for 30 minutes. Pat dry with towel. Heat broiler to high. Arrange eggplant and zucchini on baking sheet and toss with 2 TBS olive oil. Broil for 20 minutes, turning occasionally, until tender and golden.2. Meanwhile, heat remaining oil in a large heavy-based saucepan and cook the onion and garlic for 5 minutes, stirring occasionally. Add mushrooms and saute for 3 minutes until tender. Add the spices and cook for 1 minute, stirring to mingle flavors.3. Add the potatoes and cook for 3 minutes, stirring. Pour in the tomato puree, tomato paste and 2/3 cup water, cover and cook for 10 minutes or until the sauce begins to thicken. 4. Add the eggplant, zucchini, ketchup, cayenne pepper, apricots and chickpeas. Season and cook partially covered for 10-15 minutes until the potatoes are tender. Add a little extra water if the tagine becomes too dry. Sprinkle with cilantro before serving with rice or couscous.
